On Wednesday, Nov. 11, several communication studies students hosted the first UHD VegOut event in which participants were encouraged to add more vegetables in their diet. The event was a success, with approximately 150 individuals in attendance to receive tips for healthy eating. Participants enjoyed mingling with peers, faculty and staff, while enjoying many interactive and educational booths.

Moreover, attendees were encouraged to try new vegetables, such as: Brussel sprouts, asparagus, mushrooms, eggplant, radish and cauliflower. In addition to tastings, participants played games called Veggie Roulette and Name that Veggie. Attendees also took photos with a custom Instagram photo booth cutout.

Many University leaders stopped by the event and spoke about the importance of this message particularly for the UHD community— including UHD President Dr. Bill Flores and Edward Hugetz, interim senior vice president for Academic and Student Affairs and Provost.

Students from Ashley Archiopoli's, Ph.D. (COMM 3314—Research in Communication Studies) and Creshema Murray's, Ph.D. (COMM 3315—Small Group Communication) classes researched, planned and executed the event in collaboration with local community organization, Recipe for Success, as a part of their service learning courses.

The event was sponsored by the Center for Community Engagement and Service Learning as well as the Center for Critical Race Studies.
